INGREDIENTS
Mini waffles (8 each):
- Using Golden Waffles Original Waffle and Pancake Mix follow the mixing instructions for waffles.
- Golden Waffles mini waffle iron plate.
For the maple bacon:
- 8 Slices of center cut bacon
- 1/4 Cup maple syrup
- Flakey salt to taste
For the eggs:
- 1/4 Cup clarified butter
- 8 Eggs
PREPARATION
Add 6 oz. of prepared Golden Waffles Original Waffle & Pancake Mix to a preheated waffle iron sprayed with Golden Waffles Easy Release Waffle Iron Spray. Bake for 2 minutes and 30 seconds or until waffle iron beeps.
Place bacon on wire racks and bake in a 350 F convection oven. 5 minutes into the cooking process, remove bacon and brush with maple syrup. When bacon is cooked halfway through, remove bacon and brush with maple syrup again. Flip the bacon, brush the other side with syrup. Continue brushing and cooking bacon until fully cooked and crispy, Season with flaky salt. reserve bacon at room temperature.
For eggs, heat clarified butter in pan and when hot, add eggs. Cook eggs over medium low heat, season with salt and pepper. Cook eggs until done and hold until ready to assemble waffles sandwiches.
PLATING
- 4 Mini waffles, sliced in half horizontally
- 8 Slices of maple bacon
- 1 Cup sharp cheddar cheese, shredded
- 2 Avocados, peeled, pitted, sliced thin
- 1/4 Cup chives, snipped
Place sliced waffles on sprayed pans and top each with bacon slices and cheddar. Place bacon and cheese topped waffles under broiler to melt the cheese. Top waffles with sliced avocados and fried eggs. Garnish eggs with snipped chives.
